Watermelon Salad
This salad is super basic and can be riffed on in many many ways. Add olives or shallots, or swap out the mint for basil. Add heirloom tomatoes and dust with a little za'atar. Many a great chef have played with these awesome fresh summer flavors and we're sure you can come up with something special too!
Ingredients

1/3 cup extra-virgin olive oil

3 tablespoons fresh lemon juice

2 teaspoons sea salt

1/2 teaspoon freshly ground pepper

1 teaspoon preserved lemon finely diced

One watermelon, cut into triangles or chunks

1/2 pound feta cheese, crumbled

1/2 cup coarsely chopped mint leaves

Maldon salt
Directions
In a small jar, shake up the oil, lemon juice, salt, pepper and preserved lemon. Plate your watermelon on individual plates or a big platter for serving. Sprinkle with feta. Drizzle dressing over everything. Garnish with the mint and top with a bit of Maldon salt to serve.
